1lb penne pasta
1/2 stick butter
1c heavy cream
2tbsp sherry or wine
2c shredded sharp cheddar or smoked mozzarella
1c mushrooms, slices
1/2c red onion, chopped
1/2c green peas
1/2c fresh parsley, chopped
1 large heirloom tomato, sliced
salt, pepper to taste
2c panko bread crumbs
1. cook pasta according to directions, slightly al dente. Drain, rinse, return to pot. Add butter, cream, sherry, cheese, stir until melted.
2. Sautee mushrooms, onion, spinach until tender. Add to pasta. Stir in peas, parsley, salt, pepper.
3. Pour evenly into baking dish. Layer top with heirloom slices, salt, pepper, bread crumbs.
4. Bake at 350 for 15-20 minutes until top is golden brown (...or kinda black if you forget to take it out in time...)
