Picture this if you please:
It's 9:45pm on a weeknight. Dan's upstairs doing homework, I'm exhausted from running around all day, and we had still not had dinner. I'm standing in the kitchen, hanging on the cabinet doors, and staring blankly at the shelves, pleading for something to just jump into a pot and cook itself...
We had rice pilaf from a box, a can of cream of mushroom soup, a few slices of crouton-esque bread...
Nothing that could pass as a meal on it's own.
So, I dumped and prayed.
Po' Man's Mushroom & Rice Soup
$5 for 4 servings!
(serve with $4 white wine so it look' real fancy-like)
1 box wild mushroom & herb rice pilaf
1 can organic cream o' mushroom soup
2c vegetable broth
1/4c half n' half
1tbsp olive oil
3 fresh mushrooms, chopped
2 stalks green onions, chopped
sprinkles of oregano, cumin, pepper etc. to season
(I used 21seasoning salute from Trader Joes... love this stuff)
top with super stale bread (er...croutons)
1. Dump it all in a big pot. Give it a stir. Medium-low heat, simmer for 25 mins...
2. Turn on HGTV, watch an episode of House Hunters International.
3. Return to pot, scoop it into bowls. Top with crusty "croutons". Enjoy!
